Fresh Bean Chilli

This serves two people but is easily doubled/trebled for more

Serve with hot garlic or naan bread or rice

Method

  1. Put 1 chopped onion into a medium pan with 1 crushed garlic and 2 tsp of oil
  2. Cook over low heat until just soft
  3. Add 225g small or halved baby potatoes and 1 small red pepper, reseeded and diced combine a 20g can of tomatoes,  1tbs each of tomato paste, sweet chilli sauce and brown sugar
  4. Add to the pan with 175g sliced runners or French beans
  5. Cover and cook until the beans are tender
  6. Season to taste and serve topped with Greek style natural yoghurt
