Much more fancy than scrambled eggs or omelette on toast, so let’s get cooking.</p> <h2>French Toast</h2> <p>You need a good loaf of bread but nothing with a very crunchy crust (<i>you would think French bread would be perfect but it’s far from it</i>). A bloomer or other soft loaf works well as does brioche if you&#8217;re doing the sweet version. The following recipe will serve 2 people.</p> <p>Hand cut the loaf into 2 x 1 inch thick slices. Beat 3 eggs in a bowl with a splash of milk (<i>about 3 tbsp or 60ml</i>) until it&#8217;s uniform in colour.</p> <p>For a sweet version: Add a good pinch of sugar and a drop of vanilla essence if you have it, then mix in well.</p> <p>For the savoury version: Add a good pinch of salt and a couple of twists of black pepper and combine.</p> <p>Now place your bread in the egg mixture and leave for about 3 minutes. Just enough time to let the egg soak into the bread but not turn it into mush. Just remember dipping isn’t going to cut it here as you want that mixture to soak into the bread.</p> <p>Heat some butter in a frying pan (<i>Tip: test the heat by adding a drop of your egg into the pan, it should sizzle immediately</i>). Move the bowl close to the hob and carefully transfer the bread slices into the pan (<i>move slowly so the bread doesn’t break</i>) and fry on both sides until golden.</p> <p>Serve immediately and dress it up!</p> <p><b>If Serving Sweet</b></p> <p>Finish off on the plate with a light dusting of cinnamon and/or icing sugar (<i>Tip: you can make “icing sugar” from castor sugar with a pestle and mortar</i>). You can then add strawberries, raspberries or any other soft fruit. It’s also great with drizzle with honey, maple syrup or even chocolate or fruit syrups. It&#8217;s amazing with a drizzle of Cointreau (<i>triple sec</i>) if you like a boozy start to your mornings. In fact it’s delicious with all 3 together!</p> <p><b>If Serving Savoury</b></p> <p>Add grated cheese and pop under a hot grill for supreme cheese on toast. It’s also great served with bacon, ham or even smoked salmon if you’re feeling like a little luxury.</p> <p>There you have it, a really easy and impressive looking and tasting breakfast.
