My favourite simplest soup recipe ? I fry onions with salt, pepper and dried thyme/cumin/turmeric, and add celeriac, peppers and celery according to what's available.
Then I add any vegetables from the allotment/supermarket/local (important to be flexible in winter)and bring it to the boil. Depending on how hungry we are I finish with half a cup full of pasta or rice or barley (or millet or quinoa). I always add fresh parsley at the last minute.
I never use stock.
