Pumpkin bread is a sweet tasting bread that can be served up for Canadian / US Thanksgiving as well as Halloween and Christmas. It’s the perfect autumnal bread, that’s simple to make, and one that you should try if you’re new to breadmaking.
Ingredients for Pumpkin Bread
- 75 grams all purpose flour
- 1 ½ teaspoons baking powder
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- ½ teaspoon salt
- 2 large eggs lightly beaten
- 35 grams sugar
- 35 grams of canned solid pack pumpkin
- 14 grams vegetable oil
- 10 grams walnuts
- 10 grams raisins
- Butter for greasing your load pan
Preheat your oven to 350 degrees. Make sure your ingredients are all room temperature and not fresh out of the fridge.
Grease a 9 x 5 inch loaf pan. Make sure you grease the pan evenly. In a large mixing bowl, combine the first 5 ingredients, then add eggs, sugar, pumpkin, oil and mix well. This should take about 5 to 10 minutes and then add your nuts and raisins and stir until smooth.
Pour your pumpkin bread mix into the prepared loaf pan, and then oven bake for 70 minutes. If you use a fan oven, you’ll need to keep an eye of the pumpkin bread as fan ovens tend to cook that little bit faster.
Cool in pan on wire rack 10 minutes then remove from pan and continue to cool on the rack for another 20 minutes. At this point you might like to lock yourself in the kitchen as family members will be drawn to the kitchen by the smell!
Pumpkin bread can be served with tea or coffee or as a side dish with Thanksgiving Dinner.
